Fukuoka's Yatai

What is a yatai?

After sunset, more than 100 yatai stalls set up across Fukuoka, each marked by its colorful curtain. Ramen is a staple, but you'll also find oden, gyoza, yakitori, tempura and other favorites. Sharing a counter with local diners is a big part of the charm, and many visitors fall for the city this way.

Tenjin天神

Roughly half of Fukuoka's yatai cluster here, around the city's biggest shopping district — a favourite stop for office workers and shoppers heading home, plus a few stalls built more like a coffee bar or cocktail lounge. Arrive by 6pm if you want a seat before the after-work crowd.

Hakata & Nagahama Ramen

Tonkotsu ramen is Fukuoka's signature dish, and yatai serve it two ways: rich Hakata-style, and the lighter, thinner-noodled Nagahama-style, named for the old fish market nearby. Ask for kaedama — a refill of noodles — if there's still broth left.

A gentle hot-pot of fish cakes, tofu, egg and vegetables simmered in dashi broth. The stall's own pot doubles as the menu — just point at whatever looks good.

Yakitori

Charcoal-grilled skewers, usually chicken, brushed with tare sauce or dusted with salt. Order a few at a time and keep them coming.
